Exodus 17-18, Psalm 67-68, Luke 21

I took a library book back to the library this morning and got the next one in the series (Lillian Jackson Braun’s “The Cat Who Sang for the Birds”. I have it in regular-size print, but got it at the library in large print, as it is so much easier to read with my cataract. I also went to the store and got some groceries. Meanwhile, Phoebe was helping get ready for the next rummage sale at her church.

I made Macaroni Con Queso for lunch and we had green beans with it. It was delicious. For supper I fixed a rump roast in the slow cooker. It turned out very tender. I copied both recipes from BillyMax’s blog. The roast called for putting the roast in the slow cooker, pouring a package of dry onion soup mix over it and then pouring enough of a 12-oz. Coke over all to nearly cover the roast. The slow cooker was set too high and all the Coke evaporated and caramelized on the bottom, but the roast didn’t burn. I added a cup of water and let it sit until we got back from Wal-Mart. Then I took it out and sliced it and we had roast beef sandwiches for supper. It was really tender and delicious. The Macaroni Con Queso recipe called for three kinds of cheese: cream cheese, shredded Cheddar, and shredded Monterey Jack. The macaroni was put in the bottom of a greased baking pan without being cooked first. Then I mixed 2 ½ cups of milk with the cream cheese, added garlic salt, basil, and pepper and poured that over the macaroni. I stirred in a can of drained, diced tomatoes and ½ cup each of the shredded cheeses. I covered it tightly and baked it at 350 degrees for 30 minutes, then stirred it and sprinkled another ½ cup each of the shredded cheeses on top. I then baked it, uncovered, for 45 more minutes. The recipe had said for 30 more minutes, but our oven may bake cooler than some because the macaroni wasn’t done at 30 minutes.

I called Wal-Mart Pharmacy this morning and ordered refills of my prescriptions. This afternoon Phoebe and I went to Wal-Mart and I picked them up and also bought some peanut butter, facial tissues, and kitchen trash bags.
